Happy Birthday Coral

We recently celebrated Coral’s third birthday at Giggles N Hugs at Westfield Topanga Mall with her diabuddies. She had such a blast running around, jumping in the ball pit, and dancing to almost every song they played on the speakers. It was definitely a challenge for all of us moms to get our Type 1 kiddos to stop and drink some juice or eat some food before heading back in the play area. Hypoglycemia or low blood glucose (BG), is always a real and life-threatening condition and must be treated with fast-acting carbs immediately. We had a pitcher of Hi-C Fruit Punch and three pitchers of water in case we needed to dilute the juice or just to stay hydrated. Coral only needs about 6g of carbs to raise her BG about 80-100mg/dl, but everyone processes it differently.

We had a Semi-Private party and ordered the Prince & Princess package which included two adult entrees, two kids entrees, two sides, and beverages for up to 15 people. They set up the table coverings and balloons in colors of your choice. I choose pink, white, and purple to match the Hello Kitty party decor I ordered on Amazon. Best of all, they even serve beer and wine and do all the cleanup!

Our food was served buffet style on a table of it’s own and included crispy Chicken Littles (GF), Fruit Salad minus the banana, Pepperoni Pizza (GF), edamame, Chopped Salad, and Penne Pasta (GF) with butter sauce and parmesan. All the food was delicious and service was great. We knew the kiddos weren’t going to eat much due to all the excitement, so I made sure to order foods all the parents would be happy with. The only set back was their corporate management wasn’t able to provide the nutrition facts for all the food items until they have a certain amount of retail spaces open. I hope that changes in the future because carb-guessing can be a pain in the okole (“butt” in Hawaiian pidgin) when you need that information to calculate how much insulin to give your child prior to eating.

corals-birthday-cakeI ordered a custom Hello Kitty cake from local mom and baker, Goodness Bakery, that was deliciously moist and gluten-free for our celiac friends. The owner, Celine, and I discussed every detail of the cake and she even customized the recipe to be used with Truvia instead of cane sugar. There was cream cheese filling in between each of four coconut cake layers and a pink Swiss meringue (similar to buttercream, but made with much less sugar) frosting with floral details on opposite perimeters of the cake with the words “Happy 3rd Birthday” on the top and “CORAL” on the bottom. Everybody absolutely loved it and I’m kinda bummed we didn’t have the cake divided evenly amongst us because now it’s wrapped up tightly stored in my freezer. I should not be eating that much cake because although it was gluten-free, it was not low-carb.

Of all the places we could’ve celebrated her birthday, I’m glad we decided on Giggles N Hugs. We are truly blessed to have other T1dFamilies near us to share special moments and the highs and lows of this T1dLife.
